If you have small space, my advice would be to buy a stacked one, because the size can be flexible depending on your need, however, if you have no problem with space, you can go with the boxed dehydrator as it provides better results but can use quite some space.
  • Heat And Air: It really depends on if you have enough space or not, because if you don’t, then I advise you to go with the stackable one, because even if you are thinking about putting in more food it will only take more space vertically, but since we are talking about the heat and air circulation they are a bit problematic, because you’ll have to rotate those racks, especially the closest one the fan and the heating element. If you had no problems with space go with boxed one to avoid all these problems.
  • Flexibility: Before you go and decide what type of dryer you like you must ask yourself. Am I going to use it as often? Is the capacity or size of the meals gonna be big as often? if you answer yes, then go with a boxed dryer. but if you are a regular user and want to use it only from time to time then stackable one is the right one for you.

If it in plastic, make sure that it is FDA approved and does not contain BFA. Same thing goes for metal; the materials should be listed as safe by the FDA. Also if you are planning on using it too much better go with metal because plastic’s quality can degrade with time.
  • Portability: If you are considering this option then go with a stackable one, Period. As said time and time again, the stacked dryer is the best for people who are low in space, as you only use the trays you need. But with boxed one, you have a fixed size that can’t be changed which is usually big.

Food Dehydrator Types

Generally speaking, there are two main types:
